Preparation Method Steps:

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat and brown chicken on all sides.
  3. Remove chicken from skillet and set aside. Add onion, garlic, and ginger to skillet and cook until softened.
  4. Stir in cumin, coriander, turmeric, garam masala, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  5. Add tomatoes and coconut milk to skillet. Bring to a boil, then reduce heat and simmer for 15 minutes, or until sauce has thickened.
  6. Stir in lemon juice and cilantro. Season with salt and pepper to taste.
  7. Return chicken to skillet and cook until heated through.
  8. On a lightly floured surface, roll out puff pastry to a 12-inch circle. Cut into 8 equal triangles.
  9. Place a spoonful of chicken mixture in the center of each triangle. Bring corners of dough together and press to seal.
  10. Place tarts on a baking sheet lined with parchment paper. Brush with beaten egg.
  11. Bake for 15-20 minutes, or until golden brown and bubbly.
