Preparation Method Steps:

  1. Melt butter in a large saucepan over medium heat.
  2. Add onion, garlic, and ginger and cook until softened, about 5 minutes.
  3. Stir in tomato paste, curry powder, cumin, coriander, and cayenne pepper (if using). Cook for 1 minute to release the flavors.
  4. Drain and rinse chickpeas if using canned and add them to the pan along with enough water to cover by about 1 inch.
  5. Season with salt and black pepper and bring to a simmer.
  6. Reduce heat to low and simmer for 30-45 minutes, or until chickpeas are tender and the sauce has thickened.
