  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Remove the leaves and core from the cauliflower. Cut the cauliflower into small florets and process them in a food processor until they resemble rice.
  3. In a large skillet, brown the sausage over medium heat. Drain any excess fat.
  4. Add the onion, celery, and carrots to the skillet and cook until softened, about 5 minutes.
