  1. In a large bowl, combine the ground pork, shrimp, mushrooms, carrots, cabbage, green onions, garlic, fish sauce, soy sauce, and black pepper. Mix well.
  2. Place a rice paper wrapper in a shallow bowl of warm water for 10 seconds, until it becomes pliable.
  3. Place the wrapper on a flat surface and spoon about 1/4 cup of filling onto the bottom of the wrapper.
  4. Fold the bottom edge of the wrapper over the filling, then roll it up tightly, tucking in the sides as you go.
  5. Dip the ends of the egg roll in the beaten egg to seal.
  6. Heat vegetable oil in a large frying pan to 375°F (190°C).
  7. Fry the egg rolls in batches for 2-3 minutes per side, or until golden brown and crispy.
  8. Drain the egg rolls on paper towels and serve with a dipping sauce of your choice.
