  1. In a skillet over medium heat, brown the ground beef, onion, and garlic until cooked through.
  2. Drain off any excess grease and stir in the taco seasoning blend.
  3. In a small bowl, combine the cheddar and mozzarella cheeses.
  4. Place an egg roll wrapper in front of you, with a corner pointing towards you.
  5. Spoon about 1/4 cup of the ground beef mixture in the center of the wrapper.
  6. Top with about 1/4 cup of the cheese mixture.
  7. Fold the bottom corner up over the filling.
  8. Fold the left and right corners in towards the center.
  9. Roll the wrapper up tightly, starting from the bottom corner.
  10. Brush the edges with water to seal.
  11. Repeat with the remaining ingredients.
  12. Heat the vegetable oil in a large skillet or deep fryer to 375°F.
  13. Carefully drop the egg rolls into the hot oil and fry for 3-4 minutes, or until golden brown and crispy.
  14. Drain on paper towels and serve immediately with your favorite dipping sauce.
