Preparation Method Steps:

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press into the bottom of an 8-inch springform pan.
  3. Bake for 10-12 minutes, or until golden brown. Let cool completely.
  4. In a large bowl, beat the cream cheese and vanilla extract together until smooth.
  5. Gradually add the heavy cream, beating until stiff peaks form.
  6. Pour the cheesecake filling onto the cooled graham cracker crust and smooth out the top.
  7. Refrigerate for at least 4 hours, or overnight.
  8. Cut the cheesecake into 1-inch cubes.
  9. In a microwave-safe bowl, melt the white chocolate chips. Dip a toothpick into the melted chocolate and insert it into the bottom of a cheesecake cube.
  10. Dip the cheesecake cube into the melted chocolate and gently shake off any excess.
  11. Roll the cheesecake pop in sprinkles or chopped nuts, if desired.
  12. Place the cheesecake pops on a parchment paper-lined baking sheet and refrigerate for 30 minutes, or until the chocolate has set.
