Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook chicken breasts over medium heat until cooked through. Remove from heat and shred.
  3. In the same skillet, sauté onions and garlic until softened. Add black beans, corn, green chiles, chili powder, cumin, salt, and pepper. Cook for 5 minutes, or until heated through.
  4. Stir in shredded chicken.
  5. Spread 1/2 cup of chicken mixture down the center of each tortilla. Sprinkle with 2 tablespoons of cheese. Roll up tortillas and place in a greased 9x13 inch baking dish.
  6. Bake for 25 minutes, or until heated through and cheese is melted.
  7. Garnish with sour cream, cilantro, and additional cheese, if desired.
