  1. Preheat grill or grill pan over medium heat.
  2. Season chicken with fajita seasoning and grill for 8-10 minutes per side, or until cooked through.
  3. While the chicken is grilling, heat olive oil in a skillet over medium heat.
  4. Add onions, green bell peppers, and red bell peppers to the skillet and cook until softened, about 10 minutes.
  5. Remove chicken from the grill and slice into thin strips.
  6. Spread 1/4 cup of sour cream on each tortilla.
  7. Top each tortilla with 1/8 of the chicken, 1/8 of the sautéed bell peppers and onions, and 1/8 of the shredded cheddar cheese.
  8. Fold tortillas in half and grill for 2-3 minutes per side, or until cheese is melted and tortillas are golden brown.
