Preparation Method Steps:

  1. Preheat a large skillet or grill pan over medium heat.
  2. Season the chicken breasts with taco seasoning, salt, and pepper. Grill or pan-fry for 8-10 minutes per side, or until cooked through.
  3. While the chicken is cooking, heat the olive oil in a large saucepan. Add the onion and bell peppers and cook until softened, about 5 minutes.
  4. Add the black beans, corn, cilantro, and taco seasoning to the saucepan. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Remove the chicken from the heat and let it rest for 5 minutes before slicing into strips.
  6. Preheat a large griddle or skillet over medium heat.
  7. Place a tortilla in the center of the skillet and sprinkle with 1/4 cup each of the cheddar and Monterey Jack cheeses.
  8. Top with 1/4 of the chicken, bean mixture, and bell peppers.
