  1. In a large bowl, combine the cream cheese, sour cream, mayonnaise, Dijon mustard, parsley, salt, and pepper. Stir until well blended.
  2. Add the shredded chicken, celery, red onion, and carrots to the bowl. Stir until well combined.
  3. Place a rice paper wrapper in a shallow dish filled with warm water. Soak for about 10 seconds, or until softened.
  4. Remove the wrapper from the water and place it on a flat surface.
  5. Spread about 1/4 cup of the chicken salad mixture in the center of the wrapper.
  6. Fold the bottom of the wrapper over the filling.
  7. Fold the sides of the wrapper over the filling.
  8. Roll up the wrapper tightly, starting from the bottom.
  9. Repeat steps 3-8 with the remaining wrappers and filling.
