  1. In a large stockpot or Dutch oven, combine the chicken, onion, carrot, celery, salt, peppercorns, coriander seeds, star anise, and cinnamon stick. Cover with cold water and bring to a boil over high heat. Reduce heat to low, skim any foam that rises to the surface, and simmer for 2 hours, or until the chicken is cooked through and falls off the bone.
  2. Remove the chicken from the pot and set aside to cool. Strain the broth through a fine-mesh sieve into a clean stockpot or Dutch oven.
  3. In a small bowl, whisk together the fish sauce, hoisin sauce, and Sriracha sauce. Add to the broth and stir to combine.
  4. Bring the broth to a boil over high heat. Add the zucchini noodles and rice noodles and cook according to package directions.
  5. While the noodles are cooking, shred the chicken meat and add it back to the broth.
  6. Taste the broth and adjust seasonings with additional salt, pepper, fish sauce, or hoisin sauce as needed.
  7. Serve the Chicken Zoodle Pho hot in bowls, topped with cilantro, mint, and lime wedges.
