Preparation Method Steps:

  1. Preheat oven to 400°F (200°C).
  2. Rub the chicken breasts with olive oil, salt, and pepper.
  3. In a small bowl, combine the chipotle peppers, cumin, oregano, and lime juice. Spread the mixture over the chicken breasts.
  4. Place the chicken on a baking sheet and roast for 25-30 minutes, or until cooked through.
  5. While the chicken is roasting, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion, bell peppers, and garlic and cook until softened, about 5 minutes.
