  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press into a 9-inch springform pan and bake for 10 minutes.
  3. In a large bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in vanilla and peppermint extracts.
