Preparation Method Steps:

  1. Preheat oven to 325°F (163°C).
  2. In a large bowl, whisk together the heavy cream, milk, and 1/2 cup of sugar.
  3. In a separate bowl, whisk together the egg yolks, remaining sugar, and vanilla extract.
  4. Gradually whisk the egg yolk mixture into the cream mixture.
  5. Strain the mixture through a fine-mesh sieve into a 9x13-inch baking dish.
  6. In a small saucepan, melt the dark chocolate over low heat.
  7. Stir the melted chocolate into the custard mixture.
  8. Bake for 50-60 minutes, or until the custard has set and the top is golden brown.
  9. Cool completely before refrigerating for at least 4 hours.
  10. Just before serving, sprinkle brown sugar evenly over the surface of the custard. Use a kitchen torch to caramelize the sugar.
