Preparation Method Steps:

  1. In a large pot or Dutch oven over medium heat, brown the beef chuck roast on all sides.
  2. Remove the beef and set aside. Add the chorizo sausage to the pot and cook until browned.
  3. Add the onion, green bell pepper, red bell pepper, and garlic to the pot and sauté until softened.
  4. Stir in the chili powder, cumin, oregano, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes, or until fragrant.
  5. Add the beef broth, tomato paste, and dark chocolate (if using). Bring to a simmer.
