  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a large bowl, cream together the butter and sugar until light and fluffy.
  5. Beat in the egg and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the cranberries and walnuts, if desired.
  8. Divide the dough in half and shape each into a log about 12 inches long and 2 inches wide.
