  2. Heat cream and milk: Combine heavy cream, milk, and vanilla bean in a medium saucepan and bring to almost a simmer over medium heat.
  3. Whisking eggs and sugar: In a large bowl, whisk together egg yolks and half of the sugar until pale and fluffy.
  4. Temper eggs: Gradually add the hot cream mixture to the egg mixture, whisking constantly.
  5. Strain and pour: Strain mixture through a fine-mesh sieve into a large bowl. Pour it into individual ramekins.
