  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Season cod fillets with salt and pepper.
  4. Sear cod fillets for 2-3 minutes per side, or until golden brown.
  5. Remove cod fillets from skillet and set aside.
  6. In the same skillet, sauté onion and garlic until softened.
  7. Stir in white wine (if using) and cook until reduced by half.
  8. Add heavy cream and bring to a simmer.
  9. Stir in Parmesan cheese and season with salt and pepper to taste.
  10. Spread a thin layer of sauce in the bottom of an 8-inch square baking dish.
  11. Place cod fillets in the baking dish.
  12. Top cod fillets with remaining sauce.
  13. Mix bread crumbs and parsley together and sprinkle over the top of the gratin.
  14. Bake for 20-25 minutes, or until the sauce is bubbly and the bread crumbs are golden brown.
