Preparation Method Steps:
- Rinse and sort the black beans. Soak them in cold water overnight or for at least 6 hours.
- Drain and rinse the soaked beans. In a large pot, combine the beans, 6 cups of water, and 1 teaspoon of salt. Bring to a boil, reduce heat to low, and simmer for 1 hour or until the beans are tender.
- While the beans are cooking, prepare the vegetables. In a large skillet, heat the olive oil over medium heat. Sauté the onion, bell peppers, and jalapeno (if using) until softened and lightly browned. Add the garlic, cumin, oregano, salt, and black pepper. Cook for 1 minute more.
