  1. Rinse lentils and soak in water for at least 30 minutes.
  2. Prick the sausage skin with a fork to prevent bursting.
  3. In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat.
  4. Add onion, garlic, carrots, and celery and cook until softened, about 5 minutes.
  5. Add lentils, chicken broth, water, and red wine (if using).
