Preparation Method Steps:

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat, breaking it up into small pieces. Drain off any excess fat.
  3. Stir in the cream of mushroom soup, enchilada sauce, black beans, corn, green chiles, cheddar cheese, and onion. Bring to a simmer and cook for 5-7 minutes, or until the cheese is melted and the sauce is heated through.
  4. Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.
  5. Spoon about 1/4 cup of the beef mixture down the center of each tortilla. Roll up the tortillas tightly and place them seam side down in the baking dish.
  6. Bake for 20-25 minutes, or until heated through and the tortillas are slightly golden brown.
