Preparation Method Steps:

  1. Preheat the oven to 325°F.
  2. In a saucepan, combine the heavy cream, milk, vanilla extract, and a pinch of salt. Bring to a gentle boil and keep warm.
  3. In a separate bowl, whisk the egg yolks with half of the sugar until well combined and slightly thickened.
  4. Pour the warm cream mixture into the egg yolk mixture, while continuously whisking, and transfer back into the saucepan.
  5. Cook over low heat for about 10 minutes, until the mixture becomes creamy and slightly thickened. Do not let it boil.
  6. Pour the mixture into individual serving dishes and place in the oven for 15-20 minutes or until set.
  7. Remove from the oven and let cool at room temperature.
  8. Once cooled, sprinkle the remaining sugar evenly over the top of each creme brulee and use a torch to caramelize the sugar.
  9. Serve immediately.
