  1. Preheat oven to 350°F (175°C).
  2. Cut the squash in half lengthwise and scoop out the seeds. Use a spoon or fork to score the inside of the squash halves.
  3. In a skillet, melt the butter and sauté the onion and garlic until softened. Stir in the vegetable broth and bring to a simmer.
  4. Pour the vegetable broth mixture into a 9x13 inch baking dish. Place the squash halves in the dish and bake for 45-60 minutes, or until tender.
  5. While the squash is baking, prepare the gratin topping. In a bowl, combine the heavy cream, Parmesan cheese, Gruyère cheese, breadcrumbs, and herbs (if using). Season with salt and pepper to taste.
  6. Remove the squash from the oven and spread the gratin topping evenly over the squash. Return to the oven and bake for 15-20 minutes more, or until bubbly and golden brown.
  7. Let cool for a few minutes before serving.
