Preparation Method Steps:

  1. Rinse lentils and sort out any debris.
  2. In a large saucepan, combine lentils, vegetable broth, and seasonings. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes or until lentils are tender.
  3. While lentils are cooking, heat olive oil in a skillet over medium heat. Sauté onion, celery, and carrot until softened. Add garlic and cook for 1 additional minute.
  4. Drain lentils and mash them with a fork or potato masher. Add sautéed vegetables, brown rice, flaxseed, and breadcrumbs. Mix well.
  5. Season to taste and transfer the mixture to a greased 8x4-inch loaf pan.
