  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the flour, sugar, baking soda, and salt. Mix well.
  3. In a separate bowl, mash the bananas. Add the vegetable oil and egg, and mix until well combined.
  4. Make a well in the center of the dry ingredients and pour the banana mixture into it. Stir gently until just combined.
  5. Fold in the chopped mixed nuts.
  6. Spoon the muffin mixture into 12 muffin cups (lined with paper muffin cups or sprayed with non-stick cooking spray).
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
