  1. Remove the chicken from the refrigerator 1 hour before cooking.
  2. Rinse the chicken under cold running water and pat dry with paper towels.
  3. In a small bowl, combine the salt, pepper, garlic powder, thyme, and rosemary.
  4. Generously sprinkle the spice mixture all over the chicken, inside and out.
  5. Place the chicken on a wire rack set over a baking sheet.
  6. Brush with olive oil.
  7. Preheat oven to 425°F (220°C).
  8. Roast the chicken for 15 minutes, then reduce heat to 375°F (190°C) and continue roasting for another 45-60 minutes, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer inserted into the thickest part of the thigh.
  9. Transfer the chicken to a cutting board and let rest for 15 minutes before carving and serving.
