Preparation Method Steps:

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender.
  3. While the squash roasts, make the filling. Combine roasted squash, ricotta, Parmesan, eggs, salt, and pepper in a bowl. Mix well.
