  1. In a heavy-bottomed pot, bring the heavy cream to a boil.
  2. Once boiled, reduce the heat to low and let the cream simmer for about 2 hours, or until it reduces to half its original volume.
  3. During the process, occasionally skim off any foam that rises to the surface.
  4. After 2 hours, the cream will have thickened and reduced significantly. At this point, add the sugar and vanilla extract (if using).
  5. Stir well to combine and continue cooking for another 2 hours.
  6. Line a bowl with cheesecloth and pour the clotted cream into it. Cover with more cheesecloth and let it cool completely.
  7. Once cooled, refrigerate for at least 2 hours before serving.
