Preparation Method Steps:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat olive oil in a large skillet over medium heat. Add onion, carrots, celery, and garlic. Cook until softened, about 5 minutes.
  3. Stir in crushed tomatoes, tomato sauce, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a large bowl, combine ricotta cheese, cottage cheese, mozzarella cheese, and Parmesan cheese. Mix well.
  5. Spread 1 cup of the vegetable sauce in the bottom of a 9x13-inch baking dish. Top with 4 lasagna noodles. Spread with 1/2 of the cheese mixture. Repeat layers.
