Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and cook until softened. Add garlic and cook for 1 minute more.
  3. Stir in diced tomatoes, tomato sauce, spinach, ricotta cheese, cottage cheese, Parmesan cheese, basil, oregano, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  4. Spread 1/2 cup of the sauce in the bottom of a 9x13-inch baking dish.
  5. Top with 6 lasagna noodles.
  6. Spread with 1/2 of the remaining sauce.
  7. Top with 1/2 of the mozzarella cheese.
  8. Repeat layers once.
  9. Bake for 30-35 minutes, or until golden brown and bubbly.
  10. Let stand for 10 minutes before slicing and serving.
