Preparation Method Steps:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Slice the eggplants into rounds about ½ inch thick. Salt and pepper the slices.
  3. Dredge the eggplant slices in breadcrumbs or panko, if using.
  4. In a large nonstick skillet, heat the olive oil and fry the eggplant slices until golden brown on both sides.
  5. Transfer the fried eggplant to a baking sheet and bake in the preheated oven for 10 minutes.
