Preparation Method Steps:

  1. Preheat oven to 375°F (190°C). Grease and flour a 10x15-inch jelly roll pan.
  2. In a large bowl, combine strawberries, granulated sugar, and lemon juice. Let stand for 10 minutes, or until juices have released.
  3. In a separate bowl, whisk together cake flour, baking powder, and salt.
  4. In another bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time. Add dry ingredients alternately with milk, beginning and ending with dry ingredients.
  5. Spread batter evenly into prepared pan. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  6. Immediately turn cake out onto a clean tea towel sprinkled with powdered sugar. Roll up cake tightly, starting from one of the short ends. Let cool completely.
  7. Unroll cooled cake and spread with strawberry mixture. Re-roll cake and dust with powdered sugar before serving.
