Preparation Method Steps:

  1. Preheat oven to 400°F (200°C).
  2. Remove the leaves and core from the cauliflower. Cut the cauliflower into florets.
  3. Place the cauliflower florets on a baking sheet, drizzle with olive oil, and season with salt and black pepper. Roast in the oven for 10-15 minutes, or until tender and slightly browned.
  4. While the cauliflower is roasting, wash and chop the zucchini, bell pepper, and red onion.
  5. Mince the garlic.
  6. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped vegetables and garlic and sauté for 5-7 minutes, or until softened.
  7. Season the vegetables with turmeric powder, ground cumin, salt, and black pepper.
