  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium saucepan, bring water to a boil. Add grits and stir until smooth. Reduce heat to low, cover, and simmer for 5 minutes, stirring occasionally.
  3. Meanwhile, in a large skillet, cook sausage over medium heat until browned and cooked through. Remove sausage from skillet and set aside. Drain any excess grease from skillet.
  4. Add onion, green bell pepper, and red bell pepper to skillet. Cook over medium heat until softened, about 5 minutes.
  5. Stir cooked sausage back into skillet.
