  1. Preheat oven to 180°C (160°C fan-forced). Grease and line a 20cm springform tart tin.
  2. Crush the biscuits into fine crumbs and mix with the melted butter. Press into the prepared tin and refrigerate for 15 minutes.
  3. In a saucepan, heat the Guinness until boiling. Remove from heat and add the dark chocolate. Stir until melted and smooth.
  4. In a separate bowl, whisk together the caster sugar, eggs, and egg yolks. Gradually whisk in the chocolate mixture and cream.
  5. Pour the filling into the tart shell and bake for 40-45 minutes, or until set.
  6. Allow the tart to cool completely before topping with the caramel sauce.
