Preparation Method Steps:

  1. Drain the soaked chickpeas and rinse well.
  2. Combine the chickpeas, onion, and garlic in a large saucepan. Add water to cover and bring to a boil. Reduce heat to medium-low, cover, and simmer for 1 hour, or until the chickpeas are tender.
  3. Drain the chickpeas and reserve the cooking liquid.
  4. In a food processor, combine the cooked chickpeas, canned chickpeas, olive oil, tahini, harissa, cumin, salt, and pepper. Process until smooth and creamy, adding some of the reserved cooking liquid as needed to achieve desired consistency.
  5. Transfer the hummus to a serving bowl and garnish with lemon wedges and parsley.
