Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. Chop the Hatch chiles into small pieces.
  3. In a skillet, heat some oil and sauté the onion and garlic until softened.
  4. Add the ground beef and spices. Cook until the beef is browned and cooked through.
  5. Stir in the chopped Hatch chiles and season with salt and pepper.
  6. Spread half of the tortillas in the bottom of a 9x13 inch baking dish.
  7. Top with the ground beef mixture, salsa, and half of the cheese.
  8. Repeat layers with the remaining tortillas, ground beef, and cheese.
  9. Bake for 45-60 minutes, or until the cheese is melted and bubbly.
  10. Let cool for 10 minutes before slicing and serving.
