Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic and cook until softened, about 5 minutes.
  3. Stir in the Italian seasoning, salt, and pepper. Add the crushed tomatoes and tomato paste and cook for 5 minutes more.
  4. Pour in the vegetable broth and bring to a simmer. Reduce heat and cook until the sauce has thickened, about 15 minutes.
  5. In a large baking dish, spread a thin layer of the sauce on the bottom. Arrange 4 lasagna noodles on top.
  6. Spread half of the zucchini, squash, and mushrooms over the noodles. Top with half of the ricotta cheese, and then half of the mozzarella cheese.
