Preparation Method Steps:

  1. Line a baking sheet with parchment paper.
  2. In a medium saucepan over medium heat, combine the sugar, corn syrup, water, and cream of tartar. Bring to a boil, stirring constantly.
  3. Reduce heat to low and continue simmering, stirring occasionally, for 10-15 minutes or until the mixture thickens and reaches the hard-crack stage (300-310°F on a candy thermometer).
  4. Remove from heat and stir in vanilla extract, if desired.
  5. Dip the end of each lollipop stick into the syrup and immediately place it on the prepared baking sheet.
  6. Allow the candy to cool and harden for several hours or overnight.
