Indian Rice Pilaf

Preparation Method Steps:

  1. Rinse the rice several times in cold water until the water runs clear.
  2. In a large saucepan or Dutch oven over medium heat, heat the ghee or oil.
  3. Add the onion, garlic, and ginger and cook until the onion is softened and translucent.
  4. (Optional) If using chili peppers, add them to the pan and cook for 1 minute.
  5. Stir in the cumin, coriander, turmeric, and garam masala. Cook for 1 minute, or until fragrant.
  6. Add the rice and salt to taste. Stir to coat the rice in the spices.
  7. Pour in the water and bring to a boil.
  8. Reduce heat to low, cover and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  9. Fluff the rice with a fork and garnish with cilantro.
