  1. In a large pot, cook the brown rice according to package instructions. Set aside.
  2. In the Instant Pot, heat the olive oil and add the sliced mushrooms. Sauté for 5 minutes until the mushrooms are tender.
  3. Add the cooked brown rice to the Instant Pot along with the vegetable broth. Stir well.
  4. Set the Instant Pot to cook on high pressure for 10 minutes.
  5. After the cooking time is up, naturally release the pressure for 10 minutes and then quick release the remaining pressure.
  6. Stir in the chopped parsley, salt, and black pepper.
