  1. Turn on the Instant Pot to the sauté function and add the vegetable oil.
  2. Add the Great Northern beans, navy beans, ham hock, onion, carrots, celery, and garlic. Sauté for 2 minutes until the vegetables begin to soften.
  3. Pour in the chicken broth and add the parsley. Season with salt and black pepper to taste.
  4. Close the Instant Pot lid, seal, and set the pressure valve to sealing.
  5. Cook on high pressure for 30 minutes.
  6. Once the cooking time is complete, let the pressure release naturally for 15 minutes.
