Preparation Method Steps:

  1. Season pork chops with salt and pepper.
  2. Turn Instant Pot to "Sauté" mode. Add olive oil and brown pork chops on both sides. Remove from pot and set aside.
  3. Add onion and garlic to pot and sauté until softened.
  4. Deglaze pot with chicken broth, apple cider vinegar, brown sugar, Dijon mustard, sage, salt, and pepper.
  5. Add pork chops back to pot and cover with sauce.
  6. Secure lid and cook on high pressure for 20 minutes.
  7. Allow pressure to release naturally for 10 minutes before manually releasing remaining pressure.
  8. Transfer pork chops to a plate and spoon sauce over.
