  8. Onion: 1 large, cut into quarters
  9. Carrots: 2 medium, peeled and cut into chunks

Preparation Method Steps:

  1. In a large bowl, combine brown sugar, ketchup, vinegar, mustard, and garlic. Mix well and set aside.
  2. Season the pork ribs with salt and pepper on both sides.
  3. Set Instant Pot to sauté mode and add a little oil. Brown the ribs on both sides.
  4. Remove the ribs from the pot and set aside. Add the onion and carrots to the pot and sauté for a few minutes.
  5. Return the ribs to the pot, pour in the sauce mixture, and stir well to combine.
  6. Close the Instant Pot lid, set to manual/high pressure for 60 minutes, and let it cook.
  7. After cooking, let the pressure release naturally for 20-30 minutes before opening the lid.
  8. Remove the ribs and keep them warm while you make a cornstarch slurry to thicken the sauce if desired.
  9. Serve the ribs with the sauce poured over them and enjoy!
