  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together egg yolks and granulated sugar until light and fluffy.
  3. Gradually whisk in milk, cinnamon, and vanilla extract.
  4. Pour custard mixture into eight 4-ounce ramekins or a 9x13-inch baking dish.
  5. In a small saucepan, melt brown sugar over medium heat. Pour a small amount of melted brown sugar into the bottom of each ramekin or baking dish.
  6. Place ramekins/baking dish in a large roasting pan filled with hot water (bain-marie).
