Preparation Method Steps:

  1. Rinse the sushi rice until the water runs clear. Cook the rice according to the package instructions using 2 cups of sushi rice and 4 cups of water.
  2. While the rice is cooking, combine the rice vinegar, sugar, and salt in a small bowl. Mix well.
  3. Once the rice is cooked, spread it out in a large bowl and pour the vinegar mixture over it. Use a spatula to gently combine the rice and vinegar mixture.
  4. Lay a sheet of seaweed on a bamboo rolling mat. Place a thin layer of rice over the seaweed, leaving about 1 inch of space at the top.
  5. Arrange the beef, carrots, spinach, and daikon radish (if using) in a horizontal line in the center of the rice.
  6. Roll the seaweed up tightly, starting from the bottom and working your way to the top. Wet the top edge of the seaweed with water to help seal the roll.
  7. Slice the kimbap into 1-inch pieces and sprinkle with sesame seeds (if using).
