- Rehydrate shiitake mushrooms in hot water for 15 minutes, then slice thinly.
- Slice the beef and marinate in 1 tbsp sesame oil and 1 tbsp soy sauce for 15 minutes.
- Heat 1 tbsp sesame oil in a large pan over medium heat. Add the beef and cook until browned. Remove from pan.
- Add carrots, shiitake mushrooms, and onions to the pan. Cook until softened.
- Add the spinach and cook for 1 minute.
- Add the beef back to the pan.
- In a separate bowl, whisk together the remaining sesame oil, soy sauce, sugar, and garlic.
- Drain the sweet potato noodles and add them to the pan.
- Pour the sauce over the noodles and toss to combine.
