Preparation Method Steps:

  1. Soak sweet potato noodles in cold water for 15 minutes.
  2. Blanch spinach in boiling water for 1 minute, then squeeze out excess water and chop.
  3. Julienne the carrots.
  4. Rehydrate shiitake mushrooms in hot water for 15 minutes, then slice thinly.
  5. Slice the beef and marinate in 1 tbsp sesame oil and 1 tbsp soy sauce for 15 minutes.
  6. Heat 1 tbsp sesame oil in a large pan over medium heat. Add the beef and cook until browned. Remove from pan.
  7. Add carrots, shiitake mushrooms, and onions to the pan. Cook until softened.
  8. Add the spinach and cook for 1 minute.
  9. Add the beef back to the pan.
  10. In a separate bowl, whisk together the remaining sesame oil, soy sauce, sugar, and garlic.
  11. Drain the sweet potato noodles and add them to the pan.
  12. Pour the sauce over the noodles and toss to combine.
  13. Cook for 5-7 minutes until heated through.
