  1. Core the cabbage and remove the outer leaves. Blanch the leaves in boiling water for 2-3 minutes, or until softened. Drain and set aside.
  2. In a large bowl, combine the ground lamb, rice, onion, carrot, celery, garlic, tomato paste, beef broth, red wine (if using), oregano, and thyme. Season with salt and pepper to taste.
  3. Place a heaping spoonful of the filling in the center of each cabbage leaf. Fold the sides over the filling and roll up tightly.
  4. Place the cabbage rolls in a baking dish, seam-side down. Pour any remaining filling over the rolls.
