Loaded Baked Potato Skins
Ingredients and Weight:
- 8 large potatoes
- 1/2 cup diced bacon (about 6-7 slices)
- 1/2 cup diced onion
- 1/2 cup diced red bell pepper
- 1/2 cup sour cream
- 1/2 cup shredded cheese (a mix of cheddar and Monterey Jack)

Preparation Method Steps:
- Preheat oven to 375 degrees F.
- Boil potatoes until tender, then let cool and slice them in half lengthwise.
- Scoop out the insides of the potatoes, leaving a 1/4 inch layer of potato near the skin.
- In a skillet, cook bacon until crisp. Remove from pan, leaving the fat.
- Add onion and red bell pepper to the pan and saute until softened.
- Return bacon to the pan and add the potato flesh, salt and pepper.
- Fill each potato skin with the mixture, top with sour cream and shredded cheese.
- Bake for 15 minutes or until the cheese is melted and slightly browned.
- Garnish with cilantro and serve.
