Loaded Baked Potato Skins

Preparation Method Steps:

  1. Preheat oven to 375 degrees F.
  2. Boil potatoes until tender, then let cool and slice them in half lengthwise.
  3. Scoop out the insides of the potatoes, leaving a 1/4 inch layer of potato near the skin.
  4. In a skillet, cook bacon until crisp. Remove from pan, leaving the fat.
  5. Add onion and red bell pepper to the pan and saute until softened.
