Preparation Method Steps:

  1. Preheat air fryer to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain off the excess grease.
  3. Add the onion, bell peppers, and diced tomatoes to the skillet. Cook until the vegetables are softened.
  4. Stir in the taco seasoning and continue cooking for 1 minute.
  5. Remove the skillet from the heat and stir in the cheddar and Monterey Jack cheeses.
  6. Place a tortilla in the center of a work surface. Spread some of the ground beef mixture over the tortilla, leaving a 1-inch border around the edges.
  7. Fold the bottom of the tortilla up over the filling. Fold in the sides, then roll up the tortilla tightly.
  8. Repeat with the remaining tortillas and filling.
